I'm am Tim and my brother-in law Sam and myself are on the doorstep of opening our brewery in Syracuse, NY. The intent of this blog is to dig just a little deeper into explaining both what it takes to create our beer, and why we passionate about drinking, sharing, and brewing them. Our love for all good beer is never ending but what really tickles our tinsel are beers in which the primary focus are flavors and aromas that put yeast in the drivers seat. Yeast is all around us and while some of our beer will employ classic american hop aromas and clean monogamous yeast profile our experiments interacting with the local micro flora to create unique brews will no doubt continue to inspire us.
